Achari Qeema

Ingredients:

  1. Qeema or mince 1 kg. Turmeric powder 1/2 tea sp Asafoetida A pinch Ginger(shredded) 15 gms. Garlic(chopped) 10 flakes Ghee ½ cup Salt to taste
  2. Mustard oil 4 tsp.
  3. Onions(sliced) 3/4 cup
  4. Red chilies whole 8 nos.
  5. Mustard seeds 1 tsp.
  6. Cloves 5 nos.
  7. Red chili powder 1 tsp.
  8. Cumin seed 1 tsp
  9. Kalongi 1 tsp.
  10. Lemon juice 2 tbsp.
  11. Yogurt 1 cup
Wash the mince well and set it a side so the water drains.
Put in a pan, add tumeric,
salt
and 2 cups of water, bring to boil, cover and simmer until tender, the water gets absorbed it becomes dry.
Heat mustard oil to smoking, reduce heat to medium and add
ghee
.
Then add sliced onions and saute until brown. Remove onions for garnishing.
In the same fat fry red chilis till black, remove and discard the chilis.
Then add mustard seeds, cloves and
asafoetida
, saute untill the seeds begin to crackle.
Add the cooked lamb, red chili powder,
cumin seeds, kalonji, jaggery, ginger

and
garlic
, fry till the lamb becomes brownish.
THen add the lemon juice and simmer for a minute.
Remove the vessel from the fire, add yoghurt, stir and return to heat and fry
until the fat leaves the masala.
Adjust the seasoning.
Serve garnished with fried onions.

Baked Beef Ravioli with Cheese

Ingredient
  1. 9-oz) Beef
  2. 5-oz. Marinara Sauce
  3. 4 ounces mozzarella cheese, cut into 1/2-inch cubes
  4. 1/2cup fresh breadcrumbs
  5. one tablespoon olive oil
 
Pre-heat oven to 400deg F. Lightly grease 8-inch-square baking dish.

Combine hot pasta, sauce and cheese; spoon into prepared baking dish. Combine breadcrumbs and oil in small bowl; sprinkle over pasta mixture. Cover.

Bake for 20 minutes. Uncover; bake for an additional 5 minutes.

Cold Coffee

Ingredients:

  1. 1 cup milk
  2. 1 tbs coffee
  3. 1/2cup chocolate ice cream 
  4. chocolate for garnishing
 
Mix coffee and milk in a blander then add ice-cream then serve in a mug and garnish with chocolate.

Watermelon Juice

Ingredients:

  1. 2 cups cubes and de-seeded chilled watermelon
  2. 1/2 cup chilled water
  3. 1 1/2 tbsp suger (adjust according to the sweetness of watermelon)
  4. 1-2 tbsp lemon juice
mint leaves for garnish(optional)
Blend the above ingredients for 8-10 seconds.
If you want a smooth drink, strain.
Garnish with mint mint leaves and serve chilled.

Prawn Biryani

Ingredients

* Uncooked white rice: 1 1/3 cups
* Peeled and deveined tiger prawns: 9 ounces
* Ginger garlic paste: 1 tablespoon
* Garam masala: 1 teaspoon
* Ground black pepper: 1 teaspoon
* 4 whole cloves
* 4 whole cardamom seeds
* 2 cinnamon sticks
* salt
* Plain yogurt: 1/2 cup
* Vegetable oil: 1/4 cup
* 1 cup water
* 2 cubes chicken bouillon

1. Place rice with enough water to cover in a small bowl. Soak rice for 2 hours; drain.
2. Stir together the prawns, ginger garlic paste, garam masala, black pepper, cloves, cardamom seeds, cinnamon sticks, salt, yogurt, and oil in a microwave safe bowl until well mixed. Cook in microwave on High until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 10 minutes. Remove the prawns from the curry and set aside.
3. Stir the rice, water, and chicken bouillon into the curry and mix well. Cook in the microwave on High until rice is tender, about 10 minutes. Mix in the prawns; return to the microwave and cook on high until heated through, about 5 minutes. Discard cinnamon stick, cloves, and cardamom seeds before serving.
